Blueberry Yogurt Pancakes

Blueberry yogurt pancakes are the very best ones I have ever had so far! Seriously these pancakes are amazing. They are really fluffy, exactly how my family loves them. Of course, the fresh blueberries were a success which gives this freshness taste to the pancakes! Just drizzle some maple syrup and enjoy!

Yields 2 servings
  • 250 g plain yogurt
  • 3/4 cup flour
  • 2 eggs
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp bicarbonate soda
  • pinch of salt
  • 3 tbsp oil
  • 1/2 cup blueberries

  1. Mix yogurt with eggs.
  2. In a separate bowl mix together the dry ingredients (flour, sugar, soda and salt)
  3. Slowly add in dry ingredients to the egg mixture and whisk until smooth. Leave to rest for about 15 minutes.
  4. Add oil to the batter and mix until combined. Carefully fold in blueberries.
  5. Heat a cast-iron skillet over low heat. about ¼ cup of pancake batter onto the pan. When the pancake start to bubble up, flip and cook until it is slightly golden brown. Serve with maple syrup and fresh blueberries.
