Mini Fresh Fruit Pizzas

These cute mini fresh fruit pizzas with cream cheese frosting are very easy to make and super delicious. You can top your favourite fresh berries and fruits on various shape cookies. This is a great idea for kids birthdays or family parties! Kids love them!!

For the cookie base

  • 110 g butter, unsalted
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • pinch of salt
  • 1½ cup all purpose flour

For the cream cheese frosting

  • 250 g cream cheese, softened
  • 225 g heavy cream (35% fat)
  • 1 tsp vanilla extract
  • 90 g icing sugar

For the topping

  • strawberries, sliced
  • kiwi, peeled and sliced
  • blueberries
  • blackberries

  1. Preheat oven to 190°C degrees. Line a cookie sheet with parchment paper.
  2. In a bowl mix together the all purpose flour, baking soda, baking powder and salt. Set aside.
  3. In the bowl of your mixer add the sugar and butter and beat for a couple minutes until light and fluffy.
  4. Add egg and vanilla extract and continue mixing until the egg is fully incorporated. Add the flour and mix for an additional 2 minutes.
  5. Take the cookie dough and form it into a ball. Place it over the prepared baking sheet. Roll the ball into a round large cookie or several small shapes as you prefer. You might need to add some more flour over your roll or over the cookie so that it doesn’t stick. The cookie should be at least 0.5 cm in thickness.
  6. Bake the cookie for about 12 to 15 minutes or until edges are golden. Let cool completely.
  7. Make the frosting by combining cream cheese, sugar and vanilla extract. In a  separate bowl whip cream with a stand mixer or hand mixer until firm peaks. Gently fold it in into cream cheese mixture.
  8. Once the cookies are completely cooled slather with the cream cheese frosting.
  9. Top with fruits and berries. Store in the fridge until ready to serve.
