Spinach & Walnut Pesto

Spinach pesto! What a beautiful refreshing flavor! This recipe is a mouthful of bright summer loaded with spinach, garlic, walnuts and parmesan. Spread it on sandwiches, toss it with pasta or use it as accompaniment to many roast dishes. Enjoy!


  • 2 cups baby spinach leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley
  • 1/2 cup chopped walnuts
  • 1/2 cup parmesan cheese
  • 3 garlic cloves
  • 1 tbsp fresh lemon juice
  • 1/2 tsp lemon zest  
  • salt and fresh ground pepper , to taste
  • 1/3- cup extra virgin olive oil (use more or less for desired consistency)


  1. Combine all ingredients in a food processor; process until smooth, scraping the sides of the bowl with a spatula as necessary.
  2. Taste for seasoning and adjust accordingly.
  3. If you prefer, add more extra virgin olive oil for a thinner consistency.
  4. Transfer to a jar with a lid.
  5. Keep in the refrigerator for up to two weeks.
